Everyone Loves Pudding

I've always loved pudding.
My mother used to make it rather often, mostly from boxed mixes.
As an adult I usually made it from scratch.
But now I NO LONGER eat some of the foods that I relied upon to make pudding for decades, things like: cornstarch, flour, tapioca, sugar, and milk... and that meant I could no longer have my beloved pudding.
Being deprived of one's favorite foods is no fun at all.
And then, one magical day, when I discovered cashew based puddings...
On that most excellent day - which as I recall turned from cloudy and dreary to bright and sunny within minutes of my discovery - I learned that raw cashews, when soaked for a few hours, and blended smoothly, are very much like pudding!
In fact so much like pudding that my Premier Taste Testers were amazed to discover they were eating cashews!
After some experimentation, I learned that cashews blended wonderfully with fruits of all kinds, (sometimes even vegetables!!) and when I added healthy fats... oh... what a lovely fluffy, creamy, yummy and irresistably delicious pudding!

Don't I need a Vitamix? Nope!
I made every one of these puddings using my Oster Beehive blender. Granted it takes a bit longer and you have to divide the batches into smaller portions, but it can be definitely be done. You're seeing the proof in the images on this page!
If you own a Vitamix then you're way ahead of the game and the blending times will be cut down into seconds, rather than minutes. I recently became the proud owner of a Vitamix and tested a couple of my pudding recipes and was s.t.u.n.n.e.d. at how quickly the pudding was done.
But like I said, you do NOT need a Vitamix to make these puddings.
