I’ve always loved pudding.  As a child, we had it for dessert at least once a week. I remember helping my mother make Instant Pudding. Just add cold milk and blend. Within minutes it had set up and was ready to serve. As an adult, I preferred to make pudding from scratch and loved it warm, cold or in between.

Pudding is comfort food.

Don’t you agree? It has a smooth creamy mouthfeel that soothes. The simple act of dipping your spoon into the pudding, drawing that sweetness into your mouth… brings a feeling of relaxation and serenity. You know what I mean right?

But if you like me can no longer eat certain foods which are typically used to make pudding (e.g. milk, eggs, sugar, cornstarch, flour, tapioca, etc.), well, that means scratching pudding off the list.

Being deprived of one’s favorite comfort foods is no fun at all.

And then, one magical day, I discovered cashew based puddings…

On that most excellent day – which as I recall turned from cloudy and dreary to bright and sunny within minutes of my discovery – I learned that raw cashews – after soaking and blending – turn into pudding!

I can tell you my Premier Taste Testers were shocked to discover they were eating cashews!

I embarked on a quest to create all the delicious puddings I’d been missing (plus a few more creations!) and I learned that I could up the nutrition even higher by adding fruits and vegetables (yes, vegetables!) and then I added healthy fats… oh… what lovely, fluffy, creamy, yummy and irresistibly delicious pudding!

Do I need a high-powered blender?


I made every one of these puddings using my Oster Beehive blender. I will warn you it takes a bit longer (but just mere minutes longer) and you may need to divide the batches into smaller portions, but it can be definitely be done. You’re seeing the proof in the images on this page!

If you own a Vitamix then you’re way ahead of the game and the blending times will be cut down to seconds, rather than minutes. I recently became the proud owner of a Vitamix and tested a couple of my pudding recipes and was s.t.u.n.n.e.d. at how quickly the pudding was done.

But again, you can make these puddings using a regular blender.
