Starlene has performed the ground work for me with Pumpkin Treats.While I'm personally blessed to have the ability to eat any food without suffering from an allergic reaction, my husband isn't. He needs to watch his starch consumption (and so should I, for my health). I've always been intimidated to try wheat flour alternatives because I'm afraid what I make won't match my no-fail white flour recipes. Thankfully, Starlene has performed the ground work for me with her recipe book. She doesn't just list her favorite recipes, she guides the intimidated baker through working with coconut flour so that the first try is a success. She goes way beyond tip-giving, though. Do your coconut flour recipes use eggs?
Yes. Coconut flour really needs the binding quality of eggs to hold the product together. I have tried using “flax eggs” but only for a couple of recipes.
